Spaghetti Squash A La Shrimp

Don't lie...we all have an undying love for carbs....and as athletes we NEED it for the 90 minute games, fitness sessions and two (just kidding... three) hour long practices. We know that you can never be bored of pasta but let's try something different, shall we? After brainstorming, we decided that Spaghetti Squash would be a PERFECT way to take care of our pasta craving. This vegetable is magical (But just because it is a vegetable doesn't mean it can't taste like heaven on earth..) Cut it open and HOLY GUACAMOLE, you have Angel Hair's twin brother (....and he's HOT). We added in some other fabulous ingredients and created this flavorful recipe. Serving size is 2, but like we always one has to know....




What you'll need:

1 large spaghetti squash

1 bag of fresh or frozen shrimp

1 bag of spinach 

2 cups mushrooms (optional)

2 tbs olive oil

2 garlic cloves

1/4 cup Parmesan cheese

salt N peppa

1) Preheat the oven to 450°
2) Cut the squash in half (long ways) and scoop out the seeds. Add olive oil and salt and pepper. Then put on a tray with the inside of the squash facing upward.
3) Cook the squash for 45 minutes in oven OR microwave for 16 minutes on high, rotating a quarter turn every 4 minutes
4) Sauté the olive oil, garlic, spinach and mushrooms (on a whim, we added pine nuts too) 
5) Sauté until spinach is wilted and mushrooms tender.
6) Cook the shrimp until pink and then add it to the cooked spinach and mushrooms
7) Once the squash has cooled enough, use a fork to scrape out the inside spaghetti into a bowl
8) Serve spaghetti in bowl, add the shrimp and veggies on top (Add parmesan..this is not a suggestion, this is a MUST #GAMEchanger).
9) Eat while wearing sweatpants and watching Homeland.

You may experience stinky garlic breath.....own it....and then brush your teeth AFTER you terrorize your friends.
