Slow Cooker Corned Beef and Cabbage
In honor of St. Patty's Day we made one of our mom's corned beef & cabbage recipes! And of course we will be eating this with our teammates (what else is new)..... so we suggest you do the same (Bring some to coach too)!
INGREDIENTS (Feeds 4-5 people)
4 lbs. Corned Beef (check with the butcher and make sure it is 1st cut barrel not cryovac wrapped)
5 tbs Brown Sugar
5 tbs Brown Mustard
1 Head of Cabbage
8 small Red Bliss Potatoes
1 bag of baby carrots
DIRECTIONS
Use a 6-quart slow cooker
Trim as much of the fat from the meat as you can
In a small bowl, mix a paste of the brown sugar and mustard
Rub this mixture on all sides of the meat
Place the meat into your crockpot
Add quartered red potatoes, carrot chunks, and cabbage wedges around the meat
Cook on low for 8 to 10 hours, or until meat pulls apart easily with a fork
Let sit for 15-20 minutes before slicing
THE VERDICT
This sweet and salty glazed meat will shine on your St. Patrick's Day table. Everyone is Irish on St. Patty's Day so act like it! We are having the leftovers for lunch on toasted rye bread MMMMMTOASTY!
